Winter Greens Soup
This hearty soup is a great way to use up any of the seasonal leafy green vegetables from your fridge. This simple recipe is versatile, nutritious, and tasty. It’s sure to warm you up as a healthy lunch or for a filling afternoon snack!

Ingredients:
2 garlic cloves
1 onion/leek
1kg of green vegetables
(celeriac/kale/cabbage/sprouts/spinach)
1 tablespoon oil
1.5 litre vegetable stock
Handful of grated cheese
Instructions
1. Prep your ingredients:
- Slice the garlic and onion/ leek
- Wash all the vegetables and chop into chunky pieces
2. Heat the oil in a large saucepan and gently cook the garlic and onion/leek for
3-4 minutes until softened.
3. Then add in the rest of the vegetables and stir well for a few minutes. Season
with salt and pepper and then pour in the stock.
4. Bring to the boil and simmer for 20-30 minutes until all the vegetables are
tender. Take off the heat and leave to sit for 5 minutes.
5. Then blend with a hand blender, check for seasoning and add in more stock if
necessary.
6. Serve in warm bowls with some cheese sprinkled on top and fresh sourdough.
