Warming Vegetable Curry

This one pot dish is pure comfort food, fibre rich with root vegetables, the heat of the spices and an added boost of protein from the chickpeas to keep you fuller for longer. It doesn't take long to prepare so I make some version of this most weeks, and you can substitute whatever vegetables you have to hand. It also freezes well so it is a handy one for batch-cooking.

Warming Vegetable CurryIngredients:

3 carrots
4 potatoes
1 onion (or 1 leek)
1 tin of coconut milk
1 tin of chopped tomatoes
1 tbsp turmeric
1 tsp chilli flakes
1 tsp ground cumin
1 tin of chickpeas
2 handfuls of spinach


1. Prepare your vegetables. Dice the onion, peel and roughly slice the carrots, peel and quarter the potatoes.
2. Add 1 tbsp oil to a large pan on a medium heat and sauté the onion for 5 minutes.
3. Add the carrots and onions for 3 minutes, before adding the coconut milk, tomatoes and spices. Season, bring to the boil before reducing to a simmer. Cover with a lid, and leave to simmer for 45 minutes.
4. Add the drained chickpeas, and spinach and simmer for 15 further minutes.
Delicious served with rice or quinoa.
