Veggie Spice Bag

A healthy alternative to a regular spice bag – all of the hot salty flavour without the guilt. The root vegetables are packed with fibre and anti-oxidants and the leeks, onions and garlic are prebiotics, beneficial for your gut bacteria.
This recipe is perfect for a Fakeaway Friday. You can serve with fried chicken for a more substantial meal.

Veggie Spice Bag


500g carrots / parsnips
1 Onion, sliced
1 Leek, sliced
2 Padron peppers, sliced
1 Chilli, sliced (with seeds removed for less
1 clove of garlic, diced
Soy sauce
Spice bag mix:
1 tbsp Chinese 5 spice
1 tsp chilli flakes
2 tsp ground coriander
1 tbsp sea salt
1 tsp white pepper


1. Preheat the oven to 180’c fan. Peel the carrots/parsnips and chop into batons. Parboil for 5 minutes. Meanwhile mix your spice bag mix by combining the ingredients.

2. Place the carrots/parsnips in a large bowl with 1 tbsp oil and 1 tbsp spice bag mix, coat everything in the mix and spread in a single layer on a baking tray. Bake for 25mins, turning once halfway.

3. Heat 1 tbsp oil in a large pan on a medium heat. Add the onion for 5 minutes until softened. Add the leek, peppers, garlic and chilli for 2 minutes.

4. Add 1 tbsp soy sauce and ½ tsp of the spice bag mix and cook for a further two mins.

5. Serve the carrots topped with the onions and peppers.
