Sweet and Spicy Chicken Stir Fry with Winter Greens

A delicious, fresh green stir fry with aromatic ginger and a warming chilli kick to suit your taste. Add even more seasonal greens, including cabbage and Brussels sprouts, to bump up the nutritional value and add some extra texture. 

Chicken Stir Fry with Winter GreensIngredients:

450g chicken fillet
250g winter greens (kale, cabbage, chard)
2 cloves garlic
1-2cm piece of ginger
Fresh chilli to taste
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
150-200ml chicken stock
1 heaped teaspoon cornflour
1 tablespoon honey/sweet chilli sauce
Juice of one lime
1-2 tablespoons oil
Salt and pepper

Instructions


1. Prep your ingredients:

  • Slice the chicken fillets into bite sized pieces
  • Wash your greens, tear the leaves and chop any stalks into small pieces
  • Crush the garlic, grate the ginger and chop the chilli into small pieces
  • Mix the soy sauce and cornflour in a jug until smooth and then add the honey or sweet chilli sauce


2. Heat the oil in a wok or frying pan, season the chicken and cook on a medium to high heat for 4-5 minutes until nice and brown. Remove from the pan and keep on a plate.

3. Add a little more oil to the pan and cook the garlic, ginger and chilli gently for 3-4 minutes. Then add any stalks or bigger pieces of the greens, stir around in the pan for a few minutes and then return the cooked chicken to the pan.

4. Finally add in the torn leaves and when they are starting to wilt add in the soy, honey/sweet chilli sauce and chicken stock and cook for a few minutes.

5. Squeeze the lime juice over the pan and serve immediately with noodles or rice.
