Summer Cabbage Coleslaw

We have used the rest of our summer cabbage as a base for this fresh, crunchy coleslaw. Grate in any of your root veg like turnip, beetroot or kohl rabi to add even more flavours and colours to this seasonal slaw! This is a great veggie side dish to serve with barbeque for those summertime outdoor gatherings.

Summer Cabbage Cole SlawIngredients:

1 cabbage
1 onion or bunch of spring onions
Grated carrots or courgettes
Large handful of spinach/chard
1 apple
For the dressing:
1 tbs mayonnaise
1 tbs greek/plain yoghurt
1 tbs cider vinegar
1 teaspoon wholegrain mustard
1 tbs Irish honey
Salt and pepper


1. Prep your ingredients:

  • Slice the cabbage as finely as you can
  • Grate the carrots or courgettes
  • Wash and finely chop the spinach or chard
  • Finely slice the onions or spring onions
  • Cut the apple into matchsticks, leaving the skin on

2. To make the dressing, whisk all the “For the dressing” ingredients together in a bowl.

3. Put all the chopped, sliced, and grated vegetables in a large bowl and mix well.

4. Add the dressing to the bowl of vegetable mix and combine until everything is well coated.

5. Serve alongside your favourite barbequed meat or potato salad.
