Incorporating raw vegetables into your diet can offer health benefits, especially the raw prebiotic varieties like onions, leeks and garlic. I love this slaw which contains raw onion and garlic without being overpowering. It is also rich in anti-oxidants with the beta carotene from the carrots, and the anthocyanins in the red cabbage. This dish can be made ahead of time and is great with slow roasted meats like pulled pork, or alongside falafel in a pitta.
1/2 red cabbage
2 onions (or leek)
For the dressing:
1 tbsp sesame oil
Juice of 2 limes
2 cloves of garlic, peeled and finely diced
1 chilli, de-seeded and finely diced
4cm ginger, peeled and finely diced
1 tbsp brown sugar
1. Grate or finely slice the carrots, cabbage and onions. It's super speedy to use the grater on a food processor if you have one. Mix the vegetables well and add the chopped herbs.
2. Combine all of the dressing ingredients, adding the brown sugar last and stir until it's dissolved.
3. Coat the vegetables with the dressing and mix well.
