Soy and Balsamic Roasted Mushrooms

The tangy combination of soy sauce and balsamic vinegar gives these roasted mushrooms an intense sweet and salty flavour to complement their earthiness. The melted butter creates a delicious glaze with the garlic herb sauce. We suggest serving these flavoursome mushrooms on top of some nutty brown rice.


Soy Balsamic MushroomsIngredients:

300g mushrooms
2 cloves of garlic
1 tablespoon butter
2 tablespoons balsamic vinegar
2 tablespoons soy sauce
Half teaspoon brown sugar or honey
Sprig of rosemary or thyme
Freshly ground pepper



1. Prep your ingredients:
  • Preheat your oven to 200 degrees/180 for a fan oven
  • Wipe your mushrooms clean and cut in half or quarter depending on the size
  • Finely chop the garlic and rosemary or thyme
2. After you have prepared your ingredients, start by melting the butter in a small saucepan, careful not to burn it. Then add in the garlic, balsamic vinegar, soy sauce, sugar/honey and herbs.

3. Put the mushrooms in a roasting tin, pour over the melted butter, vinegar and soy, and season with the freshly ground pepper.
4. Roast in the oven for 15-20 minutes.
5. Serve with brown rice and stir fried kale or broccoli.
