Slow Roasted Tomatoes

Slow roasting your tomatoes brings out their natural sweetness and makes them an even more delicious addition to your late summer season meals. Their flavour is intensified and they are a perfect ingredient to keep in the fridge and add to your favourite pizza and pasta dishes!

Slow Roasted Tomatoes Ingredients:

300g cherry tomatoes
2 garlic cloves
Sprig of thyme or oregano
Olive oil
Salt and pepper

 

 

 

Instructions

1. Prep your ingredients:

  • Preheat your oven to 160 degrees or 140 for a fan oven
  • Wash the tomatoes and cut in halves or quarters for larger tomatoes
  • Peel the garlic cloves and leave them whole
  • Sterilize a glass jar and lid by washing in warm soapy water, rinsing and putting upside down on a roasting tin in the oven for 15 minutes

2. Place the tomatoes in a single layer in a roasting tin with their cut side up. Smash the garlic cloves with the back of a knife and add them to the tin. Drizzle a little oil over the tomatoes, sprinkle with the herbs, and season with salt and pepper.

3. Roast in the oven for 90 minutes. When they have finished cooking, turn off the heat and leave them in the oven to cool for a few hours or even overnight.

4. When the tomatoes have cooled, transfer them to the glass jar, top up the jar with olive oil and seal with the lid.

5. Keep the tomatoes in the fridge to use whenever you wish! Use them as a pizza or bruschetta topping or add them to pasta sauces and salads.
