Salmon, Leek and Potato Pie

This comforting salmon and leek pie is a complete dish for a cozy evening, perfect to bring to the table to share with family or friends.

Salmon, Leek and Potato PieIngredients:

600g salmon
1 large/2 medium leeks
500g potatoes
80g butter
2 heaped tablespoons flour
600ml milk
Splash of wine (optional)
Large handful of spinach/kale
1 teaspoon dill/parsley
Salt and pepper


1. Prep your ingredients:

  • Wash the leeks and slice thinly
  • Skin the salmon and cut into large chunks
  • Peel the potatoes and cut into even sized pieces
  • Roughly chop the spinach/kale

2. Heat the butter in a large saucepan and gently cook the leeks with the lid on for 8-10 minutes until softened. Then add the flour and mix well to a paste adding the wine if using.

3. Gradually pour in the milk, stirring all the time until the sauce thickens. Season with salt and pepper and simmer very slowly for 3-4 minutes making sure it doesn’t stick.

4. Add in the salmon chunks, herbs and spinach/kale and then transfer to an oven proof dish. Set aside and put the potatoes into a pot of cold salted water, bring to the boil and simmer for 10-15 minutes until tender.

5. Drain the potatoes and mash well adding a little butter and a beaten egg. Season and spread over the salmon. Bake in the oven for 30 minutes until golden on top and bubbling round the edges.

6. Take the dish out of the oven and leave to rest for a few minutes then serve with some steamed greens.
