Rustic Kale Pesto Chicken and Pasta

We have used all the classic pesto ingredients to make this no-fuss rustic kale pesto. This quick dinner dish is deliciously creamy and filling with both chicken and pasta. The finely chopped kale gives this meal a lovely texture and colour.

Rustic Kale Pesto Chicken and Pasta


450g chicken fillets
3 garlic cloves
30g sunflower seeds
1 tablespoon flour
1 tablespoon butter
200ml chicken stock
200g kale
30g parmesan
1 tablespoon lemon juice
Salt and pepper


1. Prep your ingredients:

  • Cut the chicken into strips
  • Finely chop the garlic and kale

2. Heat the oil in a pan and cook the chicken for a few minutes until lightly browned.

3. Add in the garlic and sunflower seeds and cook for another 2-3 minutes. Then add in the butter and when it has melted stir in the flour.

4. Pour in the chicken stock and stir well until smooth. Season well with salt and pepper and cook gently, partially covered with a lid, for 8-10 minutes.

5. Then add in the kale and cook for a further 5-6 minutes. Stir in the freshly grated parmesan, lemon juice and creme fraiche and continue cooking gently for another 4-5 minutes.

6. Serve with penne or fusilli pasta and more parmesan grated on top.
