Roast Spiced Cauliflower

Spice up your cauliflower this week by smothering it in vibrant spices and roasting it in the oven. Squash the roasted garlic cloves and lemon wedges towards the end of the bake to make a delicious paste that adds even more flavour to the florets!

Roast Spiced CauliflowerIngredients:

1 head of cauliflower
4 garlic cloves
1 lemon
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon coriander seeds
1 teaspoon yellow mustard seeds
4 tablespoons oil
Salt and pepper



1. Prep your ingredients:

  • Preheat your oven to 200 degrees or 180 for a fan oven
  • Wash and cut the cauliflower into florets

2. Mix the turmeric, garam masala, coriander and mustard seeds with the oil.

3. Arrange the cauliflower florets in a large roasting tin with the garlic cloves and lemon quarters. Pour the oil and spices mixture over the garlic, lemon, and florets and coat them well. Season with salt and pepper and roast in the oven.

4. After 20 minutes, remove the roasting tin from the oven and carefully squash the lemon and garlic cloves with the back of a spatula. Mix the paste into the cauliflower to coat with extra flavour and then return it to the oven for 5 more minutes.

5. Serve with lentils and warm naan or flatbreads for a filling, flavoursome meal.
