Potato Salad with Bacon and Spring Onion

Summer is potato salad time! This is a lovely dish to showcase your soft, flavoursome new season potatoes. We used crispy bacon and aromatic green garlic to add an extra bite to this popular dish. The warm potatoes will absorb the flavours of the dressing to keep them moist and full of flavour.

Potato SaladIngredients:

600g potatoes
80g bacon lardons
Half a green onion - white end
2 or 3 spring onions
1 tablespoon oil
1 tablespoon chopped parsley
For the dressing:
2 tablespoons red wine vinegar (or white wine vinegar)
4 tablespoons oil
1 tsp wholegrain mustard
1 tsp local honey
Salt and pepper


1. Prep your ingredients:

  • Wash and scrub the potatoes, leaving the skin on
  • Finely chop the green garlic, spring onions, and parsley

2. Roughly cut the potatoes into evenly sized chunks and place in a pot of cold, salted water. Then, bring to boil and simmer for 10-15 minutes until the pieces are tender.

3. While the potatoes are boiling, crisp up the bacon in a frying pan with a little oil. Add in the green garlic and soften for a few minutes.

4. Make up your dressing by putting all the “For the dressing“ ingredients in a clean jam jar, close the lid tightly and shake well to combine.

5. Drain the potatoes once finished boiling. When they are still warm, but cool enough to handle, cut into smaller, bite sized pieces. Put the potatoes into a bowl and add in the bacon and garlic you prepared. Pour over the dressing and mix gently to let the potatoes absorb some of the dressing. Add in the chopped spring onion and the parsley.

6. Serve this summery potato salad with a mixed salad or your favourite dish. It goes especially well with fish!
