Potato and Parsnip Purée

This slightly indulgent dish really makes the most of the humble potato, one of our favourite root veg. Whip up this quick and easy, creamy and cheesy purée to serve alongside your favourite mains, roast dinner, or even a fresh salad.

Potato and Parsnip Puree


500g potatoes (approx 3 medium potatoes)
350g parsnips (approx 3 medium parsnips)
20g butter
Splash of cream
60g red or white cheddar
Salt and pepper


1. Prep your ingredients:

  • Wash and peel the potatoes and parsnips then chop into evenly sized chunks
  • Grate your cheese

2. Place the potatoes and parsnips in a pot of cold salted water, bring to the boil and simmer for about 10-15 minutes until tender.

3. Drain leaving a small amount of water and leave to cool slightly. Use a slotted spoon to transfer the potatoes and parsnips to a blender.

4. Add in the butter and the cream and blend until really smooth. Add some of the cooking liquid or more cream to make it into a really smooth purée. Season with salt and pepper.

5. Transfer to an ovenproof dish, scatter over the cheese and put under the grill until the cheese has melted and is bubbling.

6. Serve for lunch or brunch with an egg and fresh salad leaves or for dinner with roast chicken or meat.
