Poached Rhubarb with Orange and Honey

SERVES: 4 | PREP TIME: 5 min | COOK TIME: 5-6 min

 

New season rhubarb is beautifully delicate in colour and flavour and needs very little cooking. Feel free to add more or less sweetening to your taste.

Poached Rhubarb with Orange and Honey

Ingredients:

500g rhubarb
Juice of one orange
1-2 tablespoon honey or maple syrup


Instructions


1. Prep your ingredients:

  • Wash the rhubarb and cut off any end roots and any leaves from the top of the stalk
  • Cut rhubarb into 2-3 cm pieces
  • Juice your orange

2. Put the chopped rhubarb in a pot and add the orange juice and honey or maple syrup.

3. Put on a gentle heat and simmer slowly with the lid off for 5-6 minutes.

4. Delicious served with yoghurt or added to your breakfast porridge or granola.
