Oven Roast Cabbage with Apple Cider Glaze

We roasted our January King cabbage with the cut side down to give it a beautifully crispy texture and slightly charred flavour. The apple cider vinegar glaze combined with the cabbage juices finishes off this delicious roast to make it a meal in itself.

Roasted Cabbage with Apple Cider Glaze


1 large cabbage
1 teaspoon fennel seeds
Salt and pepper
For the glaze:
1 tablespoon butter
2 tablespoons apple cider vinegar
1 tablespoon maple syrup


1. Prep your ingredients:

  • Preheat your oven to 200 degrees or 180 for a fan oven
  • Wash the cabbage and cut into quarters. Remove the very tough piece of the core but leave the rest of it to hold the cabbage pieces together.

2. Place the cabbage quarters in a large roasting tin cut side up.

3. Drizzle with oil and season with the fennel seeds, salt and pepper. Then turn the pieces over and season again and drizzle over a little more oil.

4. Roast in the oven for 20 minutes while you prepare the glaze.

5. Melt the butter in a small pot, add in the apple cider vinegar and maple syrup and let it bubble for 2-3 minutes until it thickens slightly. Take the roasting tin out of the oven, turn the cabbage over and pour over the glaze.

6. Return to the oven for 5 minutes and then transfer to a warm plate and serve, pouring the juices over the top.
