Mushroom Broth

The ultimate comforting broth! This recipe takes a while to cook but is very
quick to prepare so it is worth the effort. It’s a light but flavourful broth that makes a lovely appetiser or afternoon nourishing snack. I like to use a good quality chicken stock here, or one I’ve made myself if possible as it is excellent for your digestive health.

Mushroom Broth


150g onion
1 carrot
2 sticks of celery
2 cloves of garlic
250g mushrooms
1.5l chicken stock


1. Prepare your vegetables, finely dice the onion and celery, peel and dice the carrot and garlic and slice the mushrooms. Prepare your chicken stock and set aside.

2. In a large pot, add 2 tbps oil on a medium heat and sweat the onion, carrot and celery for 5 minutes until softening. Add the mushrooms and garlic for a further 3 minutes.

3. Add the chicken stock, bring to a gentle boil. Reduce to a low simmer and cover for 90 minutes.

4. With a ladle, spoon out the mushrooms and set aside.

5. With a fine sieve, strain the broth into a saucepan, discarding the remaining vegetables. Season and add the mushrooms back into the pan to serve.
