Miso Roasted Carrots

I have a few hero pantry ingredients with sweet white miso paste being one of my favourites as it can transform a meal in minutes. I love it with carrots, parsnips, brussels sprouts and even roast potatoes. It is a wonderful probiotic that feeds your good gut bacteria, and works wonderfully well with the sweetness of the carrots. The smell of this cooking never fails to make me hungry. You can add any vegetables you like here. I love this with a salmon fillet or a roast chicken, or you can add to a salad.

Miso Roasted Carrots


500g carrots
Miso glaze
2 tbsps sweet white miso
1 tbsp soy sauce
1 tbsp maple syrup
1/2 tsp chilli sauce


1. Preheat the oven to 180'c. Peel the carrots, leaving small ones whole and chopping larger ones in half. Place on a preheated baking tray.

2. Drizzle with 1 tbsp of olive oil and a generous sprinkle of sea salt. Roast for 20 minutes, turning half way through.

3. Meanwhile mix all of the miso glaze ingredients together.

4. Spoon over the carrots, coating everything well and place back in the oven for a further 10 minutes.

5. Garnish with some sesame seeds and chilli flakes and enjoy.
