Kale and Butter Beans

I love a speedy quick lunch and this one is both quick and tasty. I always recommend adding a portion of green leafy vegetables to breakfast and lunch wherever possible. Adding the butter beans here is a good source of protein which will keep your energy levels balanced. I love to have this with a slice of sourdough for a hearty lunch!

Kale and Butter Beans


1 onion
2 cloves of garlic
1 tin of butter beans
1 tin of chopped tomatoes
2 large handfuls of kale
To serve:
Lemon zest
Fresh parmesan (optional)


1. Roughly dice the onion and garlic. Add 2 tbsps oil to a large pan on a medium heat, and sauté for 5minutes until soft.

2. Add the beans and tomato, simmer and leave to simmer for 10 minutes.

3. Meanwhile, rinse, dry and chop the kale into bite size pieces.

4. Add the kale to the pan for 2-3 minutes until wilted.

5. Season to taste and serve with some lemon zest and parmesan, if using.
