Halloween Mac and Cheese

We have used all our seasonal leafy greens to make this traditional mac and cheese even more delicious and nutritious. The flecks of the dark leaves throughout the cheesy sauce are perfect for bringing that Halloween theme to your dinner table!

Halloween Mac and Cheese


400g macaroni or other small pasta
1 leek or onion
80g butter
2 heaped tablespoons plain flour
650ml milk
1 heaped teaspoon dijon mustard
100g grated cheddar and mozzarella
220g finely sliced cabbage/kale/chard/spinach
Salt and pepper


1. Prep your ingredients:

  • Preheat your oven to 200 degrees/180 for a fan oven.
  • Chop the leek or onion and slice the kale and/or cabbage finely.

2. Melt the butter in a large saucepan and gently cook the leek or onion for about 8-10 minutes until soft.

3. Add in the flour and mix well to form a paste. Then pour in the milk slowly, stirring all the time until it is all blended. Cook gently for 4-5 minutes making sure it doesn’t stick.

4. While the sauce is cooking, bring a large pot of salted water to the boil and cook your pasta as per the cooking instruction on the packet. Take the pot off the heat a couple of minutes before the end of the cooking time and drain the pasta, reserving 100ml of the cooking liquid.

5. Add all but a handful of the grated cheese and the dijon mustard to the sauce along with the reserved cooking water. Add the sliced kale/cabbage and continue cooking for 3-4 minutes. Mix the cooked pasta in with the sauce and transfer to an ovenproof dish.

6. Scatter the remaining cheese on top and bake in the oven for 30 minutes until the cheese is golden and bubbling. Serve with a green salad and fresh crusty bread.
