Green Eggs on Toast

Get your St Patrick’s day celebrations off to a good start with these green eggs on toast! Showcase your Irish veg with this nutritional and satisfying breakfast that’s just as festive as it is delicious. The added chilli flakes gives this well-rounded dish a good little kick.

Green Eggs

Ingredients:

6 eggs
1 onion/leek
150g Kale/Spinach/Chard
1 tablespoon oil or butter
Pinch of chilli flakes (optional)
1 tablespoon creme fraiche
Salt and pepper

Instructions

1. Prep your ingredients:

  • Dice the onion or finely slice the leek
  • Wash and chop the kale or greens of your choice

2. Melt the oil or butter in a non-stick pan and gently cook the onion/leek for 2-3 minutes.

3. Then add in the greens and continue cooking for 3-4 minutes until the greens have wilted. Season well with salt and pepper..

4. Whisk the eggs together in a bowl with a tablespoon of creme fraiche, season with pepper and pour into the pan.

5. Swirl the egg mixture through the greens and cook for a minute or 2 until the eggs are almost cooked.

6. Take the pan off the heat as the eggs will continue to cook while you get ready to serve. Sprinkle over a few chilli flakes and enjoy on some buttered sourdough toast and salad.
