SERVES: 4 | PREP TIME: 10 min | COOK TIME: 10 min

Gnocchi is such a handy ingredient to have in your store cupboard for a quick and tasty meal. We have combined ours with leeks, sprouts and kale gently cooked in butter to make a velvety sauce.

1 x 500g pack of gnocchi
2 garlic cloves
2 small or 1 large leek
300g sprouts/cabbage/kale
100g butter
Large handful of sage
Salt and pepper

1. Prep your ingredients:

  • Peel and slice the garlic cloves thinly
  • Wash and trim the sprouts and slice finely
  • Wash the leek, cut in half lengthways and cut into thin half moons
  • Roughly chop the sage

2. Melt the butter in a large pan. When it is foaming, add in the garlic followed by the leeks and cook gently for 2-3 minutes.

3. Then add in the sprouts, mix well and cook gently for about 5 minutes with the lid on.

4. Add in the chopped sage and season with salt and pepper.

5. Add the gnocchi to a pot of boiling salted water and cook for about 2 minutes until the gnocchi floats to the top. Then remove the gnocchi with a slotted spoon and add it to the leeks and sprouts.

6. Mix it all gently together and serve in warm bowls.
