Glazed Baby Turnips

Baby turnips are so deliciously sweet at this time of the year! This recipe keeps all their lovely flavour in the cooking liquid which is reduced with apple cider vinegar and honey. This dish works equally well with new season baby potatoes or a combination of the two.

Glazed Baby Turnips


Bunch of baby turnips (approx 300g)
500ml vegetable stock
2 tablespoons apple cider vinegar
1 teaspoon Irish honey
1 heaped teaspoon butter
Salt and pepper
Bunch of fresh herbs


1. Prep your ingredients:

  • Wash or scrub the turnips and trim the ends leaving some of the stalk on if you wish
  • Chop the herbs finely

2. Place the turnips in a saucepan and cover with the stock. Bring to the boil and simmer gently for 6-8 minutes until the turnips are tender.

3. Remove the turnips from the saucepan with a slotted spoon and keep warm in a serving dish.

4. Add the apple cider vinegar and honey to the stock and boil for about 5-6 minutes until it has reduced.

5. Then add in the butter and season with salt and pepper. When the butter has melted, pour the liquid over the turnips and scatter with the fresh herbs.

6. Serve as a side dish or with grilled chicken or fish.
