Crispy Jerusalem Artichoke Fries with Rosemary Salt

Jerusalem artichokes have such a unique sweet and nutty flavour. We have sliced them like skinny fries and roasted them with a rosemary salt to complement their earthy sweetness. The crispy edges from roasting them make them even more delicious! To make a bigger batch, add in sliced parsnips or turnips or even carrots.

Jerusalem Artichoke Fries

Ingredients:

400g Jerusalem artichokes/parsnips/turnips
2 tablespoons oil
Coarse salt
Fresh sprig of rosemary

Instructions

1. Prep your ingredients:

  • Preheat your oven to 200 degrees or 180 for a fan oven
  • Scrub the artichokes and peel the parsnips/turnip
  • Cut lengthways into 1cm slices and then again into matchstick pieces

2. Put the vegetables in a large roasting tin and mix well with the oil and put in the oven.

3. Meanwhile, chop the rosemary as finely as you can and crush with the salt in a pestle and mortar.

4. After 15 minutes, take the tin out of the oven and turn the vegetables over. Scatter over the rosemary salt and put back in the oven for a further 20-30 minutes until nice and crispy.

5. Serve as a snack or as a side with steak or chicken.
