Crispy Chilli Chicken with Mushrooms and Noodles

Spice up your mushrooms with this crispy chicken and noodle dish! This full-flavour meal is perfect for a quick and tasty midweek dinner. You can add in plenty of greens for extra flavour and goodness!


450g pack of chicken fillets
1 heaped tbs cornflour
1 tsp hot paprika
4 tbs oil
300g mushrooms
2 garlic cloves
Fresh chilli to taste
1 red or green pepper
3cm piece of ginger
1 medium onion
2 tbs soy sauce
1 tbs sweet chilli sauce
150ml chicken stock
Juice of half a lime
Large handful of greens (kale/spinach/chard)
100g noodles per person 



1. Prep your ingredients:

  • Slice the chicken fillets into thin strips and mix with the cornflour, paprika, salt and pepper
  • Finely chop the garlic, ginger and chill
  • Thickly slice the onions, pepper, and mushrooms
  • Make up your chicken stock

2. Heat the oil in a large wok or a deep frying pan and cook the chicken in batches for 2-3 minutes each side until golden and crispy. Then set them aside and keep them warm on a plate.

3. Remove half the oil from the pan and sauté the garlic, ginger, and chilli for 2-3 minutes.

4. Then add in the onions for a further 2-3 minutes, followed by the pepper and mushrooms. Continue cooking until the mushrooms become tender and then add in the chicken stock, soy sauce, sweet chilli sauce, and lime juice.

5. Finally, add in the chopped greens and let them wilt in the pan.

6. Cook the noodles as per the packet instructions. Serve the stir fried mushrooms on a bed of noodles with the crispy chicken on top.
