Creamy Cabbage and Pork

SERVES: 4 | PREP TIME: 10 min | COOK TIME: 30 min

This is such a simple and delicious way to cook your cabbage! If you don’t want to include the pork, just go straight to cooking the onion and garlic and add in a little more liquid towards the end of the cooking time to make sure it stays nice and creamy.

500g pork fillet
500g cabbage (half a large one)
1 medium onion
2 garlic cloves
150ml chicken stock
1 heaped tablespoon cream cheese
1 tablespoon oil
1 tablespoon butter
Salt and pepper

1. Prep your ingredients:

  • Trim the pork and cut into bite sized pieces
  • Wash the cabbage and slice thinly
  • Dice the onion and garlic
  • Make up your chicken stock

2. Heat the oil in a pan and brown the pork on a high heat for 4-5 minutes.

3. Reduce the heat then add in the diced onion and garlic. Season with salt and pepper and cook together for 3-4 minutes.

4. Place the sliced cabbage on top of the pork, pour the stock over the cabbage and simmer gently with the lid on for 15 minutes. Then stir in the cream cheese and continue cooking with the lid off for another 5 minutes until the cabbage is tender and the sauce has reduced a little to create a creamier texture.

5. This is delicious served with steamed or mashed potatoes on a cool autumn evening!
