Chicken and Broccoli Bake

SERVES: 3-4 | PREP TIME: 15 min | COOK TIME: 40-50 min

This classic chicken and broccoli bake is a great midweek dinner that you can prepare in advance and pop in the oven and bring to the table. We have kept the stalks on our new season broccoli to enjoy even more of the delicious, tender flavour.

Chicken Broccoli BakeIngredients:

300g broccoli
3 large chicken fillets
1 medium onion
Splash of white wine (optional)
1 tablespoon oil
1-2 tablespoons butter
2 heaped tbs plain flour
100ml chicken stock
400ml milk
120g white/red cheddar
1 teaspoon dijon mustard
2 handfuls breadcrumbs
Salt and pepper


1. Prep your ingredients:

  • Preheat your oven to 200 degrees or 180 for a fan oven
  • Cut your chicken fillets into bite sized pieces
  • Cut the broccoli into even sized pieces leaving the stalks on if you wish
  • Grate the cheese, keeping some for the top of the dish

2. Sauté the onions in oil in a pan for 2-3 minutes until softened. Then add in the chicken with the butter and cook for 3-4 minutes until browned.

3. Season the chicken and onions with salt and pepper and take them off the heat. Stir in the flour to make a paste. Put the pan back on a gentle heat and gradually pour in the wine, chicken stock, and milk while stirring all the time.

4. Once combined, cook gently for 10-15 minutes. Towards the end, add in the mustard and grated cheese.

5. Bring a pot of salted water to the boil, add in the broccoli and cook for 2-3 minutes. Drain the broccoli, mix it in with the chicken and sauce, then put it all in an ovenproof dish.

6. Cover with the breadcrumbs and grated cheese, then bake in the oven for 25-30 minutes until golden on top and bubbling around the edges.

7. Serve at the table with salad or steamed potatoes.
