Carrot and Lentil Soup

A quick soup recipe is a handy tool to prep ahead for the week so you always have a nourishing lunch or snack ready. This spicy soup is warming for cold afternoons, and packed with vibrant beta carotene from the carrots which can support your immune system. I love adding lentils to increase the protein content keeping you fuller for longer.
Carrot and Lentil Soup


1 tsp chilli flakes
2 tsp ground cumin
1 onion
600g carrots
120g red lentils
1l vegetable stock
200ml coconut milk


1. Peel and dice your carrots, and onion. Prepare your vegetable stock and rinse the lentils.

2. Add the chilli flakes and cumin to a large pan for 1 minute until aromatic. Add the onions for 3 minutes until softened.

3. Add 2 tbsps oil, carrots, lentils, stock, coconut milk and bring to the boil. Reduce to a simmer for 15 minutes.

4. Blend and season to taste. Serve with a swirl of cream or yoghurt, a spoon of seeds, fresh herbs and some chilli flakes if you like extra heat.
