Broccoli Bake with Tomato and Sausage

This quick and easy tasty bake is full of flavour but light enough to enjoy on a warm summer evening. This dish features the vibrant green broccoli, deliciously melted mozzarella, and sweet cherry tomatoes. This combination will complement the sausage filling of your choice — venison, beef, or pork — or it will make a great a vegetarian option!

Broccoli Bake with SausageIngredients:

4 large sausages (venison/beef/pork)
2 garlic cloves
1 medium onion
1 tin chopped tomatoes 400g
200ml chicken stock
1 tsp sundried tomato paste
1 tsp sweet or hot paprika
1 handful cherry tomatoes
1 head of broccoli
1 large mozzarella ball
Oil
Salt and pepper


Instructions

1. Prep your ingredients:

  • Finely slice the onion and garlic
  • Cut the sausages into bite-sized pieces
  • Wash and cut the broccoli into 8-10 pieces leaving the stalks on

2. Heat the oil in a pan and brown the sausage pieces for 3-4 minutes.

3. Add the onion and garlic to the pan and cook until the onion has softened. Then pour in the tin of tomatoes and chicken stock and season to taste with the sundried tomato paste, salt, and pepper. Continue to simmer with the lid off for about 15 minutes until the liquid has reduced. Just before removing from the heat, add in a handful of cherry tomatoes.

4. Meanwhile, bring a pot of salted water to boil then add in the broccoli and simmer for 2 minutes. Drain and rinse in cold water to keep its bright colour.

5. Put the sausage, onion and tomato into an ovenproof dish. Place the broccoli on top, cover with torn pieces of mozzarella and bake for 20 minutes.

6. Serve with a fresh green salad and garlic bread.
