Braised Red Cabbage with Apple and Christmas Spices

This is a really festive side dish which will fill your kitchen with the wonderful aromas of warm Christmas spices! The combination of bright, aromatic spices and the subtle bite of the vinegar and mustard makes for an incredibly Christmassy side dish full of flavour. We even love to showcase the rich colour of this Irish-grown red cabbage!

Braised Red Cabbage


1 medium red cabbage
1 large Irish apple
3 tablespoons red wine vinegar
3 tablespoons water
1 tablespoon wholegrain mustard
1 tablespoon brown sugar
1 teaspoon coriander seeds
1 teaspoon juniper berries
5 cloves
1 star anise
Salt and pepper


1. Prep your ingredients:

  • Take off the outer leaves of the cabbage and remove the core then slice thinly
  • Peel and core the apple and slice into thin wedges
  • Crush the juniper berries, cloves, and star anise but leave the coriander seeds whole

2. Add the spices to the vinegar, water, brown sugar and mustard. Then mix well through the cabbage and apple, season with salt and pepper and put in a large ovenproof dish.

3. Cover well with foil and cook in the oven. Check after 40 minutes, give it a stir and add a few splashes of water if you feel it needs it at this stage. Put the dish back in the oven for a further 15-20 minutes then stir in one tablespoon of beetroot chutney/redcurrant jelly and return to the oven for another 5 minutes.

4. This dish can be cooked the day before and reheated, covered, in the oven for 15-20 minutes, leaving you more time to enjoy your day!
