Beetroot and Apple Compote

We often find we have spare beetroot in the fridge and are always looking for different ways to use it. This compote is so easy to make and versatile as part of your breakfast over organic porridge oats or as a sweet but healthy fix any time of day.

Beetroot and Apple Compote


270g raw beetroots (approximately 3 medium)
1 eating apple
Juice of 2 oranges
2 tablespoons maple syrup
2 tablespoons water
1 teaspoon ground cinnamon



1. Prep your ingredients:

  • Wash, peel and grate the beetroot - wear gloves if you can to avoid the juice staining your hands
  • Peel, core and quarter the apple and slice thinly
  • Juice the 2 oranges

2. Put all the ingredients into a pot and bring to the boil slowly.

3. Simmer for 15-20 minutes with a lid partially covering the pot.

4. Add the cinnamon towards the end adding extra water if you feel it needs it and cook for another 5 minutes. The beetroot and apple should be soft and there should be a good amount of juice.

5. Leave to cool and then store in the fridge.

6. Serve with porridge and yoghurt or add a crumble on top for an easy dessert.
