Baked Cauliflower Cheese

SERVES: 4 | PREP TIME: 5 min | COOK TIME: 30-40 min

This whole baked cauliflower is a real show stopper to bring to the table! This recipe will also work well with a head of broccoli or a combination of both. The cheesy sauce is a creamy and delicious addition that is extra good mopped up with a slice of fresh crusty bread.

Cheesy Baked Cauliflower


1 whole head of cauliflower
50g butter
2 tablespoons plain flour
500ml milk
1 teaspoon dijon mustard
110g grated cheese (cheddar/gruyere)
Handful of breadcrumbs
Salt and pepper



1. Prep your ingredients:

  • Preheat your oven to 200 degrees/180 for a fan oven
  • Wash the cauliflower and leave it whole

2. Put the cauliflower in a pot of cold salted water. Bring to the boil and simmer for 6-8 minutes until tender but not soft. Drain and put in an oven proof dish.

3. Melt the butter in a saucepan and stir in the flour. Gradually add in the milk, stirring all the time until the sauce starts to thicken. Add in most of the grated cheese and mustard then season with salt and pepper.

4. Continue to cook the sauce gently for a few more minutes and then pour the sauce over the cauliflower. Season the breadcrumbs with salt and pepper and sprinkle them over the cauliflower along with the rest of the cheese.

5. Bake in the oven for 20-30 minutes until it is golden and bubbling.

6. Serve with crusty bread and a green salad.
